Homemade Shahi Tukda ( Bread Pudding )

Shahi Tukda (Royal Indian Bread Pudding) An elegant, classic Mughlai dessert featuring crispy, ghee-fried bread elements soaked in fragrant sugar syrup and topped with a rich, slow-simmered cardamom and kewra rabdi. Prep time: 10 minutes   Cook time: 1 hour   Yield: 4–6 servings Ingredients For the Rabdi (Thickened Milk)  4 cups (1 liter) Full-cream whole milk  ½ cup Condensed milk (adjust to taste)  ½ tsp Cardamom powder  1 tsp Kewra water (screwpine essence) For the Sugar Syrup  1 cup Granulated sugar  1 cup Water For the Fried Bread Base  6 slices White bread (crusts removed, cut into equal squares or triangles)  Ghee or neutral oil (for deep or shallow frying) Method 1. Kumbala kayi Ghargi / Sweet Pumpkin Fritters ( jaggery sweetened)

 Kumbalakai Ghargi / Sweet pumpkin fritters (Jaggery sweetened) Happy Ugadi /New Year to everyone celebrating๐Ÿ™ Ghargi/Garige, one of the traditional recipes from North Karnataka is absolutely delicious. This is my Mom's recipe which has been passed on to her by my grandmother. INGREDIENTS: Sweet pumpkin grated 21/2 cups Wheat flour 1 cup Ghee 1 tbsp Jaggery powder 11/2 cup Cardamom powder 1 tsp Poppy seeds 1 tbsp Oil for frying INSTRUCTION: ๐ŸŒพHeat a pan, add ghee & grated sweet pumpkin.Saute on medium flame for 2-3 minutes. ๐ŸŒพNow add jaggery powder & mix well for 2 minutes. ๐ŸŒพNow add Wheat flour, cardamom powder and mix well. Off the flame & let it cool down. ๐ŸŒพHeat oil in a Kadai, take lemon sized balls out of sweet pumpkin mixture & flatten them slightly ,deep fry them on both sides till they turn light brown. ๐ŸŒพTransfer on to a paper napkin. Sikhedundi (fried sweet laddoo)

One of the authentic oldest sweet recipes almost 200 years ago in Karnataka , Sikhedundi / fried laddoo wherein puran balls are rolled in a urad dal batter and deep fried like wadas.   A recipe worth saving and documenting as we have to take forward the legacy of our elder generations๐Ÿ“Œ๐Ÿ“Œ Recipe: ๐Ÿ‘‰๐ŸปFor Urad dal batter: Urad dal 1 cup Chana dal 2 tsp Rice 1 tsp  ๐Ÿ‘‰๐ŸปFor Puran / Chana dal jaggery stuffing Chana dal 3/4 cup Water 11/2 cup Jaggery 1/2 cup Cardamom powder 1 tsp Oil for frying ๐ŸŒบWash and Soak Urad dal  and Chana dal in sufficient water for 6-8 hours. Grind in a blender jar ti make a thick batter with very less water just like vada batter consistency. Ferment overnight or 6-8 hours.  ๐ŸŒบWash Chana dal and cook along with water for 4-5 whistles . Vegan Nigerian coconut cookie crisps (GF)

These are super crisp, flavourful and absolutely healthy cookies.Inspired by @kitchenbutterfly's recipe. This is a combination of coconut jam drops, coconut crisps and coconut candy. I have made them healthier by using almond flour instead of APF and coconut sugar instead of refined sugar. I did not have any Jam so made my own with fresh strawberries. Mason Jar Cherry Crumble (V,GF)

These individual cherry crumble mason jars are one of the easiest bakes, juicy cherries with a topping of Oats and a secret ingredient which is like a twist and made so much healthier.. Perfect for kids and elders too to grab their own cup and relish it peacefully.  Vegan Mac n cheese (stove top) using quinoa macaroni I thought of making a simplified quick stove top version of Mac and cheese using @andean.dream quinoa macaronis , broccoli, @primalkitchenfoods vegan mayo and @violife_foods vegan cheese. We love pasta and always find a way to eat it ๐Ÿ˜€ So here comes my not so authentic mac n cheese version yet super flavourful๐Ÿ™Œ INGREDIENTS: Quinoa Macaroni 1 pack Onion 1/2 chopped Broccoli florets 1 and 1/2 cups blanched Olive oil 1 tbsp Vegan cheese slices/shreds 1 cup Vegan Mayonnaise 1/2 cup Garlic powder 1 tbsp Onion powder 1 tbsp Salt to taste Coriander leaves finely chopped. Fennel Gingerbread Bundt cake(sweetened with dates)

This aromatic fennel gingerbread bundt cake is going to be your favorite festive cake as it is not only delicious but also super healthy. As the festive season approaches, we are more inclined towards baking cakes, cupcakes, cookies...but since they are loaded with sugars...I wanted to make them guilt-free! So here is an eggless sugar-free moist and delicious version of bundt style cake along with Date glaze. Usually, Gingerbread cake consists of molasses but since I did not have any in hand I tried to make this with date syrup. If you have molasses you can replace 1/4 cup of date syrup in the recipe with molasses. Also, the addition of roasted fennel seeds and ginger powder makes it so aromatic and perfect for this cold festive season.
