Huli Pudi is one of the authentic traditional Sambar powders which has been passed on from generation to generation. This is specially made in North Karnataka. There is a wide variety of sambar powders not only within Karnataka but within South India. Each region has it's own way of adding ingredients and making them. In North Karnataka brahmin families, you can usually see two types of Sambars, firstly 'Saaru ' which can also be called Rasam with Toor dal. The consistency is thin and usually made with Tur dal and tomatoes or Tamarind. The other one is 'Huli' which is thicker in consistency and usually includes some veggies or greens. Huli is one of the most popular thick Sambars made specially in North Karnataka. This is basically a type of sambar made with cooked pigeon peas/Tur dal, any veggies like potato onion, carrot, shallots, drumstick, or green leafy veggies, along with Huli pudi and other spices and simmered well. It goes very well with plain rice, chapati as well. This is specially made in North Karnataka Brahmin household.and it is different from the one prepared in South Karnataka, the main difference being the Huli pudi ingredients which are different from the sambar powder and also grated/ground coconut paste is not extensively used in North Karnataka. I made up my mind that I will make it at home with all organic ingredients and no artificial preservatives or colors. That's when I started making my own sauce at home. Healthy Baked Apple Roses

Apple roses are one of the beautiful autumn desserts in which the apples are beautifully styled as roses and then baked as a pastry. Usually, the puff pastry is made up of all-purpose flour which I again don't prefer in my baking. Hence, here I have made a quick whole wheat pastry dough which is much healthier and filling. I like refined sugar free desserts. I am always in search of ingredients that can replace refined sugar. So in this recipe, I have used organic maple syrup which gives both the apple slices as well as the pastry a beautiful sweet flavor. Usually, these are made by rolling a row of half apple slices and attached with pastry dough. And the end result resembles the shape of a rose flower. These will come out so beautiful that you will think about whether to eat or put it for display!! Use a softer variety of apples like Fuji, pink lady, or gala.
