Batata Vada using leftover Masala

If you have leftover potato Masala that you make for Masala  Dosa then don’t worry make this easy peasy instant Batata  .   Base:  1.5–2 cups Leftover potato masala Batter:  1 cup gram flour (besan), ¼ tsp turmeric, salt, a pinch of baking soda, and water. Optional Crunch:  Add 1–2 tbsp rice flour to the batter for a crunchy texture   Prep the Masala:  If the leftover masala is chunky, mash it slightly. If it lacks heat, add chopped green chilies, ginger garlic paste, or fresh coriander. 2. Shape:  Grease your hands with a little oil and roll the mixture into lemon sized balls  or slightly flattened patties. Mix the Batter:  Combine the batter ingredients, adding water gradually until it reaches a  thick, smooth flowing consistency  that can coat a spoon. Fry:  Heat 2 inches of oil in a pot. Grilled Pesto Tofu Veggie Skewers 🍢




 What else can be more perfect than grilling some of our fav ingredients like Tofu , Brussel sprouts, cherry tomatoes, bell peppers & Zucchini all marinated in a simple pesto sauce.  Believe me this vegan marination tastes heavenly 😀 Super easy if you have some pesto in hand.

INGREDIENTS:
Tofu 1 block cut in cubes
Red bell pepper 1 cut in small squares 
Brussel sprouts 5-8 
Cherry tomatoes 10-12
Green Bell peppers 1 cut in small squares
Zucchini 1 sliced 
Pesto (homemade / storebought) 1 cup
Oil for grilling

INSTRUCTION: 
1.If you're using wooden skewers, soak them in water for about 30 minutes to prevent them from burning.

2.Wash and prepare your vegetables by cutting them into chunks or slices, making sure they're all roughly the same size for even cooking.

3.Dice Tofu into cubes.

4.In a big bowl, take 1 cup of pesto, add in all the veggies and tofu. 

5.Stir gently to coat them with the marinade.

6.Keep aside in the Fridge for 1/2 an hour. 

7.Thread the vegetables and tofu onto the skewers, alternating the types to create colorful skewers.

8.Brush the skewers with olive oil and sprinkle with salt, pepper, and any other desired herbs or spices.

 9.Place the skewers on a tava / Grilling pan.Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.

10.Serve hot as a side dish or main course. Enjoy your veggie skewers!

If you are making pesto at home:

For a quick pesto recipe, combine 2 cups of fresh basil leaves, 1/2 cup of grated Parmesan cheese, 1/2 cup of extra virgin olive oil, 1/3 cup of pine nuts or walnuts, and 3 minced garlic cloves in a food processor. Pulse until the mixture is smooth, adding more olive oil if needed for consistency. Season with salt and pepper to taste. Transfer to a jar and refrigerate for later use, or use immediately to make these yummy vehgie skewers .

Pao de Queijo (pronounced as pown -deh- kay-zho) aka Brazilian Cheese Bread is a small baked cheese bun, a popular snack and breakfast food that originated in the state Minas Gerais of Brazil.
