Basundi using Coconut Sugar

Homemade Basundi/Rich sweetened with Coconut sugar , flavoured with cardamom and nutmeg and garnished with dryfruits. INGREDIENTS: Organic Milk 2 cups Coconut Sugar 1 cup Cardamom powder 1-2 tsp Nutmeg a pinch Sliced almonds for garnishing  INSTRUCTION: 1.Boil organic milk for a good 45 minutes to make it thick and collect the cream . 2. Add coconut sugar, cardomom powder and nutmeg powder  3.Garnish with sliced almonds..Tastes delicious when chilled.

Mason Jar Cherry Crumble (V,GF)






These individual cherry crumble mason jars are one of the easiest bakes, juicy cherries with a topping of Oats and a secret ingredient which is like a twist and made so much healthier.. Perfect for kids and elders too to grab their own cup and relish it peacefully.


Inspired by this healthy recipe from @simplyquinoa, I had to bake these and they were all gone soon after they came out of the oven and got clicked 😀😉

INSTRUCTION:

For the cherries

Cherries (fresh/frozen) 1 1/2 cup pits removed

Coconut sugar 2 tbsp

Tapioca starch 2 tbsp

Cinnamon Powder 1/2 tsp

Vanilla extract 1/4 tsp


For the topping.

Oats 1 cup 

Sattu flour 1/3 cup

Coconut oil 1/3 cup

Maple syrup 1/3 cup

Vanilla essence 1 tsp

Cinnamon powder 1/2 tsp


INSTRUCTION:

1.Preheat Oven at 350 degrees F

2.Add the pitted cherries in a bowl, add in coconut sugar, tapioca starch , cinnamon powder and vanilla extract. Mix well and keep aside.

3.In another bowl, add all the ingredients mentioned under toppings and mix thoroughly.

4.Just fill half of the mason jar with the cherry mixture and the other half with the topping.Continue with all 4 mason jars..

5.Bake in the Oven for 20-25 mins until the top starts browning and the cherries start bubbling. 

6.Take out of the oven, cool and devour😋

Huli Pudi is one of the authentic traditional Sambar powders which has been passed on from generation to generation. This is specially made in North Karnataka. There is a wide variety of sambar powders not only within Karnataka but within South India. Each region has it's own way of adding ingredients and making them. In North Karnataka brahmin families, you can usually see two types of Sambars, firstly 'Saaru ' which can also be called Rasam with Toor dal. The consistency is thin and usually made with Tur dal and tomatoes or Tamarind. The other one is 'Huli' which is thicker in consistency and usually includes some veggies or greens.
