Homemade Shahi Tukda ( Bread Pudding )

Shahi Tukda (Royal Indian Bread Pudding) An elegant, classic Mughlai dessert featuring crispy, ghee-fried bread elements soaked in fragrant sugar syrup and topped with a rich, slow-simmered cardamom and kewra rabdi. Raddish and Potato Hooman - A Goan curry

 This is one of the authentic Goan curries which is usually made with seafood. This is prepared in every Goan kitchen paired with fish, prawn, or other sea food. 

But as a vegetarian, My mother in law who stayed in Goa for a long time came up with this idea of making this curry with just vegetables like radish, potato, and onion. All these vegetables are sauteed and mixed with a coconut-based gravy and spices. There is one spice called 'Tephla' which is used in making Goan Curries. It gives a great flavor to the curry. But since I do not get them in my place. I haven't added it.

As you all know Daikon Radish is an excellent source of nutrients including calcium, magnesium, potassium, and copper. It is highest in Vitamin C and folate. Potatoes, being a starchy vegetable are a good source of carbohydrates and also contain Vitamin C, potassium, and vitamin B6. Coconuts needless to say are a superfood. High in fiber, vitamins, minerals, and a source of good fats. Overall a very healthy dish especially for vegetarians. Also, all the spices give this dish a lovely aroma and helpful in digestion too.

This is a very simple recipe with amazing taste that you can cook within 30 minutes. Since my husband is from Goa, I learned this recipe from my Mother in law and make it when we get bored of usual curries.

So let's dive into the recipe

INGREDIENTS: 

 Fresh coconut grated 1 cup

 Dry red chilies 5-8

Peppercorns 6-8

Turmeric powder 1 tsp

 Coriander seeds 1tsp

 Rice 1tsp

Cumin seeds 1tsp

Tirphal /Sichuan Pepper 2-3 corns (optional)

Tamarind 1 small lemon sized ball

Daikon radish cut into cubes 1small 

Potato cut into cubes 1 small

Onion chopped into slices 1/2 small

Water 11/2 cup

Coconut oil 1tbsp

INSTRUCTION:

1.Firstly, add freshly grated coconut, coriander seeds, dried red chilies, peppercorns, cumin seeds, tamarind ball, and rice in a Mixer/Blender Jar.

2.Now add 1/4 cup water and grind it into a fine paste. Adjust the consistency as required. Keep aside.


3.Heat a Kadhai/pan, add oil, and then sliced onions. Saute for a minute till they become translucent.

4. Now add cubed potatoes and saute well for 2 minutes.


5.Now add cubed daikon radish and saute again for 1 minute.

6.Now add 1/2 cup of water and boil for 5 minutes and let the veggies cook well.


7.Now add the ground coconut spice paste and stir well. Let it cook for another 5 minutes. Then add salt and sugar. Mix well.


8.Once it cooks well, garnish with coriander leaves and serve hot with rice.

Huli pudi (Sambar Powder) North Karnataka style

Huli Pudi is one of the authentic traditional Sambar powders which has been passed on from generation to generation. This is specially made in North Karnataka. There is a wide variety of sambar powders not only within Karnataka but within South India. Each region has it's own way of adding ingredients and making them. In North Karnataka brahmin families, you can usually see two types of Sambars, firstly 'Saaru ' which can also be called Rasam with Toor dal. The consistency is thin and usually made with Tur dal and tomatoes or Tamarind. The other one is 'Huli' which is thicker in consistency and usually includes some veggies or greens.
