No Yeast • No Refined Sugar • 100% Whole Wheat


These rolls offer all the cozy comfort of traditional cinnamon rolls but with a healthy, wholesome twist. By swapping all-purpose flour for whole wheat and using baking powder instead of yeast, you get a quick, fuss-free treat that is packed with juicy, caramelized apple goodness.

Ingredients

For the Quick Pastry Dough

• 2 cups Whole wheat flour

• 2 tsp Baking powder

• ½ tsp Baking soda

• ¼ tsp Salt

• 3 tbsp Cold butter (cut into small cubes)

• ¾ cup Yogurt or Buttermilk (adjust slightly to form a soft dough)

• 2 tbsp Coconut sugar

For the Juicy Apple Filling

• 2 medium Apples, finely chopped

• 1 tbsp Butter (for sautéing)

• ¼ cup Coconut sugar

• 1 ½ tbsp Ground cinnamon

• Optional: A splash of water or lemon juice to help soften the apples


Step-by-Step Instructions

1. Sauté the Apples

1. Melt 1 tablespoon of butter in a pan over medium heat.

2. Add the finely chopped apples. Sauté for 5–7 minutes until they turn soft, tender, and slightly caramelized.

3. Remove from heat and let them cool completely before adding to the dough.


2. Prepare the Cinnamon Sugar Mix

1. In a small bowl, mix the coconut sugar and ground cinnamon together. Set aside.


3. Make the No-Yeast Dough

1. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and 2 tablespoons of coconut sugar.

2. Add the cold cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs.

3. Gradually add the yogurt (or buttermilk) and bring the mixture together into a soft dough. Do not overknead, or the rolls will become too dense.


4. Assemble and Roll

1. Preheat your oven to 375°F (190°C) and grease a round baking dish or cake pan with a little butter.

2. On a lightly floured surface, roll the dough out into an even rectangle (about ¼-inch thick).

3. Spread the cooled, sautéed apples evenly over the dough.

4. Generously sprinkle the cinnamon-coconut sugar mixture over the apple layer.

5. Starting from the long edge, carefully roll the dough into a tight log.

6. Using a sharp knife or a piece of unflavored dental floss, cut the log into 1-inch thick slices.


5. Bake to Perfection

1. Place the rolls cut-side up in the prepared baking dish, leaving just a little space between them.

2. Bake for 20 to 25 minutes, or until the tops are golden brown and the filling is bubbly and fragrant.

3. Serve warm to enjoy the ultimate juicy burst of apple and cinnamon flavors!
