Base: 1.5–2 cups Leftover potato masala Batter: 1 cup gram flour (besan), ¼ tsp turmeric, salt, a pinch of baking soda, and water. Optional Crunch: Add 1–2 tbsp rice flour to the batter for a crunchy texture Prep the Masala: If the leftover masala is chunky, mash it slightly. If it lacks heat, add chopped green chilies, ginger garlic paste, or fresh coriander. 2. ONION CHUTNEY...North karnataka style prepared by my Mom. It is perfect with dosa ,idly or phaddu. Even with chapati and Jowar bhakri.This is one of the traditional north karnataka chutneys prepared in villages from 80 years. . INGREDIENTS: For Chutney: Oil 1-2 tbsp Urad dal 1 tbsp Tur dal 1 tbsp Peanuts 1/4 cup Dried red chilli 2-3 Tamarind 1 inch Salt to taste Jaggery 2 tbsp Chopped onion 1 For Tempering Oil 2 tsp Mustard seeds 1/2 tsp Jeera 1 tsp Hing 1/2 tsp Turmeric powder 1/2 tsp Curry leaves 3-4 . INSTRUCTION: 🍂In a pan make a tempering /oggarane of oil, urad dal,tur dal , peanut, dried red chilli ,tamarind ,salt ,jaggery add chopped onion .Fry them well. 🍂After it cools down ,Grind in a mixie Jar into chutney consistency. 🍂Top it with a tempering /oggarane of oil, mustard seeds, jeera, hing, turmeric,curry leaves. 🍂 Serve with your favourite Dosa / Idly .
